Recipe 19:Red Velvet Cupcakes


As I mentioned in my previous post,I just bought a new oven and this red velvet cupcake recipe was my first attempt.I'm not really a big fan of red velvet actually,but I love its color,so I decided to make some on my own.

So,here's a recipe that I tried,basically I combined few recipes I found on the internet and change a bit here and there according to my convenience.

Ingredients

A
300 g flour
2 tbs of baking powder
1 tbs of soda bicarbonate
2 spoons of cocoa powder

First mix and shift all the ingredients above and set aside in a bowl.

B
A cup of sugar
125 g of butter(I used salted butter)
Few drops of vanilla essence
2 eggs

C
Few drops of red coloring(I used liquid type,you can also use powder type if you want)

D(Buttermilk substitute)
A cup of fresh milk
1 spoon of vinegar(I used apple vinegar)

E(Cream Cheese Frosting)
360 g cream cheese
Sugar as you desire(I prefer it not too sweet)
Few drops of vanilla essence
70 g butter

Methods

1.In my case,I substitute using buttermilk with a cup of fresh milk mixed with a spoon of vinegar,and set aside for 10 minutes before use.
2.Firstly,mix ingredients A and shift into a bowl and set aside
3.Mix ingredients B except eggs until  it forms nicely.
4.Later put the eggs one at a time and keep mixing using the electrical mixer
5.Now,add the flour mixture little by little,and alternately,add buttermilk(If you use any) or a cup of fresh milk added with a spoon of vinegar as stated in ingredients D.Keep mixing until everything blends well as in the picture below.
6.Now,add a few drops of red coloring into the batter,and keep mixing for a few more minutes
7.Preheat your oven at 180 degrees celcius  for 10 minutes and when the oven is ready,put the tray of cupcakes poured into your desired type of paper cup and bake for 15 to 20 minutes.
8.Check whether the cupcakes are cooked or not by sticking into it using a tooth stick and if the stick comes out clean,that means the cupcakes are well cooked.
9.Set aside at room temperature and let them cool for a while.
10.In the meantime,prepare the cream cheese frosting(method here)and when ready,load in a piping bag and decorate your cupcakes with the cream cheese frosting as you desire.
11.Well,this is rather optional,but if you want,you can choose one of the ugliest cupcakes,and turn it into red velvet crumbs and sprinkle on top of your cupcakes like in the picture :P.
